Bangkok's street-food queen, in her 70s, who still cooks every dish herself over roaring charcoal.
Supinya Junsuta — known worldwide as Jay Fai — runs a tiny street-side kitchen in Bangkok's old town, and well into her 70s she still cooks every single order herself. She didn't start as a chef but as a seamstress, until a fire destroyed her shop and pushed her toward the wok.
Her food turned a plastic-stool street stall into a global pilgrimage. In 2018 she became the most famous street-food chef in Thailand to earn a Michelin star, and fans now queue for hours for a seat.
Her weapon is fire. Cooking over roaring charcoal, she wears ski goggles to shield her eyes from the flames while tossing her legendary crab omelette. In Chef Cup, raw heat and a lifetime of hand-built skill make Thailand a terrifying draw.
